February's birthstone amethyst has been used by humanity for millennia.  From being associated with the Egyptian god Osiris to the Biblical priest Aaron, amethysts have a rich and storied history.  They are also said to prevent or cure drunkenness, were revered by the nobility of Europe, and Hinduism links the stone to the crown chakra.
